Prep Time: 20 Minutes Cook Time: 15 Minutes Serves: Approx. 4 Ingredients: 12 ounces Bowties
1/4 cup olive oil
1 pound chicken breasts, diced into 1-inch cubes
1 cup zucchini, quartered, diced
1-1/2 cups diced tomatoes
2 tablespoons chopped fresh basil
2 tablespoons chopped fresh cilantro
3 tablespoons minced garlic
2 cups tomato sauce
Salt and pepper to taste
1/2 cup grated Parmesan cheese
Directions: Cook and drain pasta according to package directions. Meanwhile, heat olive oil in a medium size skillet. Cook and stir chicken for 4 minutes. Add zucchini, tomatoes, herbs and garlic; cook an additional 4 minutes. Add tomato sauce; simmer for 10 minutes. Season to taste with salt and pepper. Top pasta with sauce and sprinkle with Parmesan cheese.
